• 1 lb (450 g) Italian sausage (mild or spicy, casings removed)
• 1 medium onion, diced
• 2–3 cloves garlic, minced
• 4 medium potatoes, diced (Yukon Gold or Russet work best)
• 2–3 carrots, sliced into thin rounds
• 6 cups chicken broth (or vegetable broth)
• 1 cup heavy cream (or half-and-half for lighter version)
• 3–4 cups fresh spinach (or baby spinach)
• 2 tbsp olive oil (if needed for sautΓ©ing)
• 1 tsp Italian seasoning (oregano, basil, thyme blend)
• Salt & black pepper, to taste
• Red pepper flakes (optional, for heat)
• Grated Parmesan cheese, for serving

1. Cook Sausage
