Here's the recipe for Birria Wings with Consomé:


*Ingredients:*


- 2 pounds chicken wings

- 2 dried guajillo chilies, stemmed and seeded

- 2 dried ancho chilies, stemmed and seeded

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon dried oregano

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves

- 1/4 teaspoon black pepper

- 1/4 cup lard or vegetable oil

- 2 cups chicken broth

- 1/4 cup vinegar

- Salt, to taste

- Fresh cilantro, chopped (optional)


*Instructions:*


1. Rehydrate chilies in hot water for 30 minutes. Blend with onion, garlic, cumin, oregano, cinnamon, cloves, and black pepper.

2. Heat lard or oil in a large pot. Add chili mixture and cook for 5 minutes.

3. Add chicken wings and cook until browned on all sides.

4. Pour in chicken broth and vinegar. Bring to a boil, then simmer for 30-40 minutes or until wings are tender.

5. Strain consomé and serve with wings. Garnish with cilantro, if desired.
