🐔 2 boneless, skinless chicken breasts
🧄 2 cloves garlic, minced
🍋 Juice of 1 lemon

🌿 1 tsp dried oregano

🥬 4 cups chopped romaine lettuce
🧅 1/2 small red onion, thinly sliced
🥒 1/3 cucumber, sliced
🍅 6–8 cherry tomatoes (mix of red and yellow), halved
🌿 Fresh parsley for garnish
For the Tzatziki Sauce:
🥒 1/2 cup Greek yogurt
🥒 1/4 cucumber, grated and drained
🧄 1 small garlic clove, minced
🌿 1 tbsp chopped fresh dill or parsley
🍋 1 tsp lemon juice
🧂 Salt to taste

Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Coat the chicken breasts and marinate for at least 15 minutes (or up to 2 hours in the fridge).
Grill the chicken: Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken for 5–7 minutes per side, or until golden and cooked through (internal temp: 165°F/74°C). Let rest for 5 minutes, then slice.
Make the tzatziki: In a small bowl, combine the Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, dill/parsley, lemon juice, and a pinch of salt. Mix well and chill.
Assemble the salad: In a large bowl, layer romaine lettuce, cucumber slices, halved cherry tomatoes, and red onion.
Add protein and dressing: Top with the sliced grilled chicken, a generous scoop of tzatziki, and a sprinkle of fresh parsley.
Serve fresh: Enjoy immediately while the chicken is warm and juicy.
