Here's a recipe for Traditional Irish Beef Stew:


*Ingredients:*


- 2 pounds beef stew meat (such as chuck or round)

- 2 tablespoons olive oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 2 carrots, peeled and chopped

- 2 potatoes, peeled and chopped

- 1 cup beef broth

- 1 cup Guinness stout

- 1 tablespoon tomato paste

- 2 sprigs fresh thyme

- Salt and pepper to taste


*Instructions:*


1. Heat olive oil in a large Dutch oven over medium-high heat.

2. Brown beef on all sides, about 5 minutes. Remove and set aside.

3. Add onion and garlic to the pot and cook until softened, about 5 minutes.

4. Add carrots and potatoes, and cook for 5 minutes.

5. Add beef broth, Guinness, tomato paste, thyme, salt, and pepper. Stir to combine.

6. Return beef to the pot and bring to a boil.

7. Cover and transfer to the oven. Braise for 2-3 hours or until beef is tender.

8. Serve hot, garnished with fresh thyme.
