Vanilla Bean Sugar Cookies
These soft and buttery vanilla sugar cookies have a delicate texture and a sweet, crisp exterior thanks to a sugar coating. Perfect for any occasion and easy to prepare.
Ingredients:
2 cups all-purpose flour plus 2 tablespoons
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup salted butter, softened at room temperature
1 cup sugar plus 1/4 cup extra sugar for rolling
1 large egg
3 teaspoons vanilla bean paste (or substitute vanilla extract)
Method:
Preheat and prepare:
Preheat your oven to 350°F (175°C). Line two cookie sheets with a Silpat mat or parchment paper.
Mix dry ingredients:
In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
Cream butter and sugar:
In a large bowl using an electric mixer, cream the butter and 1 cup of sugar until fluffy, about 1 minute. Beat in the egg and vanilla until well combined.
Combine dough:
Gradually add the flour mixture to the butter mixture in half-cup increments, mixing after each addition. Scrape down the sides of the bowl to ensure everything is incorporated.
Shape and coat:
Using a small ice cream scoop, form dough balls. Roll each ball in the extra 1/4 cup sugar, then place them on the prepared cookie sheets about 2 inches apart.
Bake and cool:
Bake the cookies for 9 to 11 minutes, until they have lightly spread. Allow the cookies to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
