- 1 lb thinly sliced beef ribeye or sirloin

- 1 tablespoon olive oil

- 1 large onion, thinly sliced

- 1 green bell pepper, thinly sliced

- 1 red bell pepper, thinly sliced

- 1 cup shredded provolone cheese

- 1 package egg roll wrappers

- Vegetable oil for frying

- Salt and pepper to taste

1. Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned, breaking it up into small pieces.

2. Add onion and bell peppers to the skillet. Cook until vegetables are tender.

3. Lay an egg roll wrapper on a flat surface. Place a slice of beef mixture in the center, followed by a sprinkle of cheese.

4. Fold the bottom half of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

5. Repeat with remaining ingredients.
