 Mediterranean Feta and Roasted Veggie Board


Ingredients:


1 zucchini, sliced


1 red bell pepper, sliced


1 yellow bell pepper, sliced


1 small eggplant, sliced


2 tbsp olive oil


Salt & pepper, to taste


200 g feta cheese, cubed


2 tbsp olives (Kalamata or green)


1 tbsp fresh herbs (parsley, oregano, or thyme)


1 tbsp balsamic glaze


Optional: pita or crusty bread for serving


Directions:


Preheat oven to 400°F (200°C). Toss sliced vegetables with olive oil, salt, and pepper. Roast for 20–25 minutes until tender and slightly caramelized.


Arrange roasted vegetables on a serving board with feta cubes and olives. Drizzle with balsamic glaze, sprinkle fresh herbs, and serve with pita or crusty bread for a colorful Mediterranean platter.
