- 1.5 tsp dried thyme
- 1.5 tsp dried oregano
- 1.5 tsp salt
- 0.5 tsp black pepper
Ribs:

- 3/4 cup sweet alcoholic apple cider (or apple juice)
- 1 tbsp olive oil
Homemade Barbecue Sauce:
- 1/2 cup apple cider vinegar
- 1 1/2 cups tomato ketchup
- 1/2 cup water
- 1 1/2 tbsp molasses
- 1/3 cup brown sugar
- 2 tsp mustard powder
- 1 1/2 tsp garlic powder
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp Tabasco or cayenne pepper (optional)
Instructions
1. Combine the rub ingredients and rub onto both sides of the ribs. Set aside for 20 minutes or overnight.
2. Preheat oven to 160°C/320°F. Place ribs on a tray, pour apple cider underneath, cover with foil, and bake for 1 hour 30 minutes.
3. Remove from oven, increase temperature to 180°C/350°F, remove foil, drizzle with olive oil, and bake for 15 minutes.
4. Line a new tray with foil and baking paper. Transfer ribs, pour juices over them, and slather with barbecue sauce.
5. Bake for 10 minutes, flip, and slather with sauce again. Repeat 2-3 times until glazed.
6. Cut into portions and serve with remaining sauce.
Tips:
- Use meaty pork ribs with fatty tissue for tender results.
- Adjust cooking time based on rib type: Baby Back (1.5 hours), St. Louis Style (1.5 hours), Spare Ribs (1 hour 10 minutes).
- For thicker sauce, simmer for 45 minutes or adjust with cornstarch.
