Pork with Potato and Carrot 😋
Ingredients:
• 500 g pork (can be pork loin, ribs or shoulder), cut into pieces
• 4-5 medium potatoes, peeled and cut into thick slices
• 2 carrots, peeled and cut into thick slices
• 2 tablespoons olive oil
• 1 medium onion, chopped
• 3 cloves garlic, chopped
• 1 large tomato, chopped (or ½ cup tomato puree)
• 1 bay leaf
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1 cup beef or chicken broth (or water with broth cube)
• 1/2 cup white wine (optional)
• Salt and pepper to taste
• 1 sprig rosemary (optional)
• Chopped fresh parsley (for garnish, optional)
Instructions:
1. Sear the meat: In a large casserole dish or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the pork pieces and brown them on all sides until they are well-sealed. This will help the meat stay juicy. Then, remove the meat and set aside.
2. Sofrito: In the same casserole dish, add the onion and minced garlic. Cook over medium heat until golden and fragrant, about 5 minutes. If you decide to add additional carrots, add them at this step as well.
3. Add the tomato: Stir in the chopped tomato (or tomato puree) and cook for about 3-4 minutes more, until the tomato breaks down a bit and blends well with the flavors of the sofrito.
4. Season: Add the cumin, paprika, bay leaf, and rosemary (if using). Stir well to distribute the spices.
5. Cook the meat: Add the browned meat back to the pot and mix well with the sofrito. If using white wine, add it at this point and let the alcohol evaporate, about 2-3 minutes.
6. Add the broth: Pour in the beef broth or water with the broth cube. Bring to a boil and then reduce the heat to medium-low. Cook for about 20-30 minutes, until the meat is starting to soften.
7. Add the potatoes and carrots: Add the sliced potatoes and carrots. If necessary, add a little more broth or water to help the vegetables cook through. Cook everything together for another 30-40 minutes, or until the potatoes are tender and the meat flakes easily when touched with a fork.
8. Adjust and serve: Taste the sauce and adjust salt and pepper to taste. If the sauce is too thin, you can let it simmer uncovered for a few more minutes until it thickens. Serve hot and garnish with chopped fresh parsley if desired. 🤤
