🛒 Ingredients


For the Chicken 🍗


2 boneless, skinless chicken breasts


1 tbsp olive oil


1 tsp dried rosemary


1 tsp garlic powder


1/2 tsp dried thyme


Salt & pepper to taste


For the Potatoes 🥔


300g (10 oz) baby potatoes, halved


1 tbsp olive oil


1/2 tsp garlic powder


Salt & pepper


1 tsp dried oregano or rosemary


For the Green Beans 🥦


200g (7 oz) green beans, trimmed


1 tbsp olive oil


Salt & pepper


1/2 tsp lemon zest (optional)


👨‍🍳 Instructions


1. Preheat the Oven


Preheat the oven to 200°C (400°F). Line a baking dish or roasting pan with parchment paper or lightly grease it with olive oil.


2. Prepare the Potatoes


Toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread them out evenly on one side of the pan.


3. Season the Chicken


Rub chicken breasts with olive oil, rosemary, garlic powder, thyme, salt, and pepper. Place them in the center of the pan, alongside the potatoes.


4. Roast the Potatoes and Chicken


Roast in the preheated oven for 25 minutes.


5. Prepare the Green Beans


While the chicken and potatoes are roasting, toss the green beans with olive oil, salt, and pepper.


6. Add the Green Beans


After 25 minutes, remove the pan from the oven. Flip the chicken and stir the potatoes. Add the green beans to the other side of the pan.


Return the pan to the oven and roast for another 20 minutes, or until the chicken is fully cooked (internal temperature should reach 75°C or 165°F) and the potatoes are tender.


7. Serve


Slice the chicken and serve with roasted potatoes and green beans. Optionally, add lemon zest or a squeeze of fresh lemon juice on the green beans for extra flavor.


💡 Tips & Variations


Add a squeeze of fresh lemon juice or a sprinkle of grated Parmesan on the green beans after roasting for extra flavor.


You can also add carrots or other vegetables to the pan for a more hearty meal.


Swap chicken breasts for thighs if you prefer juicier chicken.
