Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup milk
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
2 large onions, thinly sliced
2 tablespoons butter
1 packet onion soup mix (optional, for deeper flavor)
1 1/2 cups beef broth
6–8 slices Swiss cheese
Instructions:
Caramelize the onions
In a skillet over medium heat, melt the butter.
Add the sliced onions and cook slowly, stirring often, until golden and caramelized (about 15–20 minutes).
Prepare the meatloaf mixture
In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, salt, and pepper.
Mix gently until just combined (don’t overmix).
Form and place in crockpot
Shape into a loaf and place it in your slow cooker.
Spread half of the caramelized onions over the top.
Pour beef broth around the meatloaf (not on top). If using onion soup mix, stir it into the broth first.
Slow cook
Cover and cook on low for 6–7 hours or high for 3–4 hours, until fully cooked (internal temp: 160°F / 71°C).
Finish with cheese
In the last 10 minutes, place Swiss cheese slices over the meatloaf.
Cover until melted and gooey.
Serve
Spoon extra caramelized onions and broth over the top.
Slice and serve with mashed potatoes, roasted veggies, or crusty bread.
